A quick supper rustled up for fun (3 - 4 people)
1 packet large black mushrooms
1 tub sweet chilli cream cheese
1 onion, finely chopped
1/2 bunch spinach, washed and roughly chopped
1/4 cup cream or milk
1 teaspoon garlic
1 cup grated cheddar
salt and pepper to taste
dash of freshly grated nutmeg
Method:
Put the grill on to get nice and hot
Fry off the mushrooms over a medium heat in a hot pan
Place on a baking tray
Add a little olive oil to the pan and fry off the onion until golden
Add the spinach and saute gently until soft
Add the garlic, nutmeg, salt, pepper, milk or cream and simmer for a few minutes
Place generous spoonfuls of sweet chilli cream cheese and top with the spinach mixture and then the grated cheese
Bake until golden and bubbling
Serve up and enjoy
(I served with with a nice health bread slathered in humus for fun)
