Le Mousse ...
150g dark (preferably organic and possibly a little bitter) chocolate
300 mls cream, whipped until stiff
4 eggs, separated
30 mls brandy, coffee or orange liqueur (must be your favourite)
a dash of vanilla powder & cinnamon
What you do:
Separate the eggs and beat the egg whites until stiff peaks form, set aside briefly
Melt the chocolate over a medium heat in a double bowler
Whip the cream up and set that aside too
When the chocolate is melted, remove from over the pan of boiling water, stir in the egg yolks and your alcohol of choice - it may go a little wierd looking here but perservere - keep on mixing until it is kind of silky looking ...
Slowly fold in the cream and then fold in the egg whites
Chill in the refridgerator until ready to serve - you can serve individually or as a big bowl
(works really well with strawberries too )
