    Loving Spoonful Main Course 1 - Grilled Pork Fillet Medallions with Griddled Quince Slices

    Prep time : around 20 mins

    300g pork fillet, trimmed and sliced
    10 mls Extra Virgin Olive Oil
    Salt & Pepper to taste
    5 mls ginger, fresh chopped
    2 garlic cloves, crushed
    3 mls Chinese Five Spice
    1 ripe quince, sliced
    2 tablespoons honey
    2 teaspoons balsamic vinegar

    Recommend serving with fluffy mashed potatoes and oven roasted vegetables

    Preheat the grill in your oven and prepare your side dishes in advance as this takes a really short time to prepare
    Mix the salt, pepper, ginger, garlic and Chinese five spice in a bowl, toss the pork fillet slices in the mixture, and put to one side.
    Heat a frying pan with the olive oil
    Grill the pork fillet medallions, until tender, adding the quince slices, cooking until starting to soften.
    Layer the pork slices on top of the quince slices and place under the grill for 2 – 3 minutes, while you add the honey and balsamic vinegar to the pan juices, bring to boiling point and top the pork fillets and quinces with the juice.
    You are now ready to serve up your love apples with tender pork medallions ....
